Vegan Potato Salad Recipe

Ingredients

Makes 4 to 6 servings

  • 1 1/2 pounds small white potatoes, unpeeled
  • 2 celery ribs, cut into 1/4-inch slices
  • 1/4 cup sweet pickle relish
  • 3 tablespoons minced green onions
  • 1/2 to ¾ cup vegan mayonnaise
  • 1 tablespoon soy milk
  • 1 tablespoon tarragon vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • freshly ground black pepper

Method

  1. In a large pot of salted boiling water, cook the potatoes until just tender, about 30 minutes
  2. Drain and set aside to cool
  3. When cool enough to handle, peel the potatoes and cut them into 1-inch dice
  4. Transfer the potatoes to a large bowl and add the celery, pickle relish and green onions
  5. Set aside
  6. In a small bowl, combine the mayonnaise, soy milk, vinegar, mustard, salt and pepper to taste
  7. Mix until well blended
  8. Pour the dressing onto the potato mixture, toss gently to combine and serve
