Thyme-Scented Sweet Potatoes With Black Olives Garlic Recipe

Ingredients

Makes 4 servings

  • 1 1/2 pounds sweet potatoes
  • 2 tablespoons olive oil, plus more if desired
  • 3 garlic cloves, crushed
  • 1 teaspoon dried thyme
  • salt and freshly ground black pepper
  • 1/3 cup pitted oil-cured black olives

Method

  1. Peel the sweet potatoes, cut in half lengthwise, then cut into 1/4-inch slices
  2. In a large skillet, heat the oil over medium heat
  3. Add the sliced sweet potatoes and garlic
  4. Sprinkle with the thyme and season with salt and pepper to taste
  5. Cook for 1 minute, stirring to coat
  6. Reduce the heat to low, cover and cook, stirring occasionally, until the potatoes are tender, about 20 minutes
  7. A few minutes before it is done cooking, add the olives and taste, adjusting seasonings if necessary
  8. Drizzle with a little additional olive oil, if desired
  9. Serve immediately
