Roasted Cauliflower With Lemon Capers Recipe

Ingredients

Makes 4 servings

  • 1 medium head cauliflower
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons capers

Method

  1. Preheat the oven to 425°F
  2. Lightly oil a baking sheet and set aside
  3. Remove the core and leaves from the cauliflower, then use a large serrated knife to cut the head lengthwise into 1/2-inch slices
  4. Arrange the sliced cauliflower in a single layer on the prepared baking sheet
  5. Drizzle with olive oil and season with salt and pepper to taste
  6. Roast the cauliflower until it is tender and slightly browned, turning once, about 15 minutes
  7. During the last 5 minutes of cooking time, sprinkle with lemon juice and capers
  8. Serve immediately
