Soba Green Lentil Soup Recipe

Ingredients

Makes 4 to 6 servings

  • 2 tablespoons olive oil
  • 1 medium onion, minced
  • 1 medium carrot, halved lengthwise and sliced diagonally
  • 2 garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 cup green (French) lentils, picked over, rinsed and drained
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth or water
  • salt and freshly ground black pepper
  • 4 ounces soba noodles, broken into thirds

Method

  1. In a large soup pot over medium heat, heat the oil
  2. Add the onion, carrot and garlic
  3. Cover and cook until softened, about 7 minutes
  4. Uncover and stir in the tomatoes, lentils, thyme and broth and bring to a boil
  5. Reduce heat to medium, season with salt and pepper to taste and cover and simmer until the lentils are just tender, about 45 minutes
  6. Stir in the noodles and cook until tender, about 10 minutes longer and serve
