Ingredients

  • 1/4 cup (60 ml) peanut oil
  • 2 pounds (910 g) fresh spinach, washed and dried
  • 2 cloves garlic, crushed

Method

  1. Heat the oil in a heavy skillet or wok over high heat
  2. Add the spinach and garlic, stir-fry for only a minute or two, and then serve

Makes 6 servings

  1. Each with 6 grams of carbohydrates and 4 grams of fiber, for a total of 2 grams of usable carbs and 4 grams of protein
