Ginger Sesame Salmon Seafood Recipe

Ingredients

  • 1 sheet Reynolds Wrap heavy-duty
  • aluminum foil – (12″ by 18″)
  • 4 thin onion slices — separated into
  • rings
  • 2 medium carrots — shredded or
  • cut into julienne strips
  • 1 pound salmon fillet – (to 1 1/2 lbs) — thawed if necessary
  • 2 teaspoons fresh ginger — grated
  • 2 tablespoons seasoned rice vinegar
  • 2 teaspoons sesame oil
  • salt — to taste.
  • freshly-ground black pepper — to taste.
  • fresh spinach leaves.

Method

  1. Center onion and carrot on foil sheet
  2. Top with salmon fillet
  3. In small bowl, combine ginger, rice vinegar and sesame oil
  4. Pour over salmon
  5. Season with salt and pepper
  6. Wrap and seal foil to form a packet
  7. Cook covered, 20 to 25 minutes on medium-hot grill or until fish flakes easily with a fork
  8. Serve salmon topped with onion and carrots on a bed of spinach
  9. Sprinkle with additional seasoned rice vinegar, if desired
  10. Baking instructions: Preheat oven to 450 degrees; bake for 16 to 20 minutes on a cookie sheet
  11. This recipe yields 4 servings
