Rockfish In Sweet N Sour Sauce Seafood Recipe

Ingredients

  • 2 pounds whole dressed rockfish — thawed if necessary
  • cornstarch — as needed.
  • oil — as needed.
  • 1/4 cup sliced green pepper
  • 2 green onions — sliced diagonally
  • 1 teaspoon slivered fresh ginger root
  • 1 garlic clove — minced
  • water — as needed.
  • 1/3 cup white vinegar
  • 2 tablespoons dry sherry or fish stock
  • 1 tablespoon catsup
  • 1/4 cup sugar
  • 1 teaspoon salt

Method

  1. Rinse and dry rockfish
  2. Sprinkle cornstarch over entire surface of fish
  3. Heat oil to depth of 1/2-inch in skillet large enough to hold fish
  4. Fry about 5 minutes per side or until rockfish flakes easily when tested with a fork and is golden brown on outside
  5. Remove fish from oil; drain on paper towels
  6. Keep warm
  7. Saute green pepper, green onion, ginger and garlic in 2 tablespoons oil until crisp-tender
  8. Add 1/3 cup water, vinegar, sherry, catsup, sugar and salt; bring to boil
  9. Dissolve 2 teaspoons cornstarch in 2 tablespoons water; add to hot mixture
  10. Cook and stir until thickened
  11. Pour sauce over fish
  12. Serve hot
  13. This recipe yields 4 servings
