Vegan Mayonnaise Recipe

Ingredients

Makes about 2 cups

  • 1 (12-ounce) package silken tofu, drained
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon ground cayenne (optional)

Method

  1. In food processor or blender, combine all the ingredients and process until smooth and well combined
  2. Taste, adjusting seasonings if necessary
  3. Scrape the mayonnaise into a container with a tight-fitting lid, cover and refrigerate until needed
  4. Properly stored, it will keep for up to 5 days
