Smoked Salmon Clubhouse Sandwich Seafood Recipe

Ingredients

  • 1 can salmon — (14-3/4 oz.)
  • — drained and flaked
  • 12 slices bread — toasted
  • 1/8 teaspoon liquid smoke — (up to 1/4)
  • 2 teaspoons fresh dill — chopped
  • 2 tablespoons red onion — small dice
  • 4 lettuce leaves
  • 8 slices tomato
  • 8 slices bacon — cooked
  • 1/2 cup low-fat mayonnaise — plus
  • 4 tablespoons low-fat mayonnaise

Method

  1. Mix salmon with dill, onion and 1/2 cup of mayonnaise; add liquid smoke to taste
  2. Lay out bread slices in 4 rows of 3
  3. Top each slice with 1 tsp of mayonnaise
  4. Divide the salmon mixture among 4 slices of bread and top with lettuce leaf
  5. Add a second slice of bread, topping with 2 slices of bacon (cut in half) and 2 slices of tomato
  6. Crown with the remaining slices of bread and secure with toothpicks
  7. Cut in half diagonally and serve
