Dried Fruit Chutney Recipe

Ingredients

Makes about 2 cups

  • 1 cup water
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 tablespoon grated fresh ginger
  • 1/3 cup minced onion
  • 1 small dried hot red chile
  • 1/2 teaspoon salt
  • 1 cup dried apricots, chopped
  • 1/2 cup pitted dates, chopped
  • 1/2 cup raisins

Method

  1. In a large saucepan, combine the water, vinegar, sugar, ginger, onion, chile and salt and bring to a boil, stirring occasionally
  2. Reduce heat to low and simmer for 5 minutes
  3. Stir in the apricots, dates and raisins and simmer until thickened, stirring frequently, about 20minutes
  4. Cool to room temperature
  5. Remove the chile and discard before serving
  6. If not using right away, spoon the chutney into a container with a tight-fitting lid
  7. Cover and refrigerate until needed
  8. Properly stored, this chutney will keep for up to 2 weeks
