Ingredients
Makes about 2 cups
- 1 cup water
- 1/4 cup apple cider vinegar
- 1/4 cup sugar
- 1 tablespoon grated fresh ginger
- 1/3 cup minced onion
- 1 small dried hot red chile
- 1/2 teaspoon salt
- 1 cup dried apricots, chopped
- 1/2 cup pitted dates, chopped
- 1/2 cup raisins
Method
- In a large saucepan, combine the water, vinegar, sugar, ginger, onion, chile and salt and bring to a boil, stirring occasionally
- Reduce heat to low and simmer for 5 minutes
- Stir in the apricots, dates and raisins and simmer until thickened, stirring frequently, about 20minutes
- Cool to room temperature
- Remove the chile and discard before serving
- If not using right away, spoon the chutney into a container with a tight-fitting lid
- Cover and refrigerate until needed
- Properly stored, this chutney will keep for up to 2 weeks
