Raisin Conserve Recipe

Ingredients

  • Serving Size : 1
  • 15 ounces seedless raisins
  • 2 1/2 cups water
  • 1/2 cup lemon juice
  • 1/2 cup chopped walnuts
  • 1 package pectin – powdered fruit
  • 4 cups sugar

Method

  1. Combine raisins, water and lemon juice.
  2. Cover and let stand overnight or at least 4 hours.
  3. Bring mixture to a boil and simmer, covered 30 minutes, stirring often.
  4. Drain raisins, reserving juice
  5. Put raisins through food chopper or chop them very find
  6. Measure 4 cups raisins and juice into a large kettle.
  7. Add nuts and pectin.
  8. Place over high heat and cook stirring, until mixture comes to a hard boil.
  9. Stir in sugar, bring to a full rolling boil, boil hard 1 minute.
  10. Remove from heat and skim off foam.
  11. Ladle into sterilized hot jars, to within 1/8 inch of jar top.
  12. Wipe jar rim; adjust lids.
  13. Process in boiling water bath 5 minutes.
  14. Remove from canner.
