Lemony Edamame Dip Recipe

Ingredients

Makes about 2 1/2 cups

  • 1 1/4 cups shelled fresh or frozen edamame
  • ¾ cup frozen peas
  • 1 garlic clove, crushed
  • 1 tablespoon chopped green onions
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cayenne
  • 1/2 cup water
  • 2 tablespoons minced fresh parsley or cilantro, for garnish

Method

  1. In a large saucepan of salted boiling water, cook the edamame until soft, about 10 minutes
  2. During the last minute, add the peas
  3. Drain well and set aside
  4. In a food processor, process the garlic and green onions until finely minced
  5. Add the cooked edamame and peas, lemon juice, oil, salt and cayenne and process until smooth
  6. Add up to 1/2 cup of water and process until smooth
  7. Taste, adjusting seasonings if necessary
  8. Transfer to a medium bowl and sprinkle with the parsley
  9. Serve right away or cover and refrigerate for 1 hour to allow flavors to intensify
  10. This dip is best if used on the same day that it is made
