Carrot-Ginger Dressing Recipe

Ingredients

Makes about 1 cup

  • 2 medium carrots, shredded
  • 2 tablespoons chopped fresh ginger
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons fresh orange juice
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 2 tablespoons grapeseed oil

Method

  1. In a blender or food processor, combine the carrots, ginger and vinegar and blend until smooth
  2. Add the orange juice, soy sauce, mirin and oil and blend until smooth
  3. Taste, adjusting seasonings if necessary and add a splash more orange juice if a thinner dressing is desired
  4. Store leftover dressing tightly covered in the refrigerator, where it will keep for 1 to 2 days
