Low Fat Tarragon-Yogurt Dressing Recipe

Ingredients

  • 1 cup nonfat plain yogurt
  • 1 clove garlic, peeled
  • 1/4 teaspoon salt, plus more to taste
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 teaspoon chopped fresh tarragon
  • 1 pinch cayenne pepper

Method

  1. Line a sieve with a double layer of cheesecloth or paper towels and place over a bowl.
  2. Spoon in yogurt and drain at room temperature for 25 minutes.
  3. With the side of a chef’s knife, mash garlic with 1/2 teaspoon salt.
  4. Transfer to a small bowl; whisk in drained yogurt, oil, tarragon and cayenne.
  5. Adjust seasoning with salt.
