Ranchero Sauce Recipe

Ingredients

Makes about 2 1/2 cups

  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 1 jalapeno, seeded and minced
  • 2 garlic cloves, minced
  • 1 (14.5-ounce) can crushed tomatoes
  • 1 (4-ounce) can chopped mild green chiles, drained
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 cup minced fresh cilantro

Method

  1. In a medium saucepan, heat the oil over medium heat
  2. Add the onion, jalapeno and garlic
  3. Cover and cook until softened, about 5 minutes
  4. Stir in the tomatoes, green chiles, cumin and chili powder
  5. Simmer, uncovered, for 15 to 20minutes to allow flavors to blend
  6. Just before serving, stir in the cilantro
  7. Serve immediately
  8. If not using right away, cool the sauce to room temperature, then transfer to a container, cover and refrigerate until needed
  9. Properly stored, the sauce will keep for 3 to 4 days
  10. Reheat the sauce in a saucepan over low heat until hot
