Oven-Fried Fish And Chips Seafood


  • 1 cup cornflakes — crushed
  • 2 tablespoons parmesan cheese — grated
  • 1/8 teaspoon cayenne pepper — or to taste
  • 1 egg
  • 1 tablespoon milk
  • 1/3 cup flour
  • 4 pollock fillets — (4 to 6 oz. each)
  • salt and black pepper — to taste
  • non-stick cooking spray
  • french fries
  • tartar sauce or cocktail sauce — if desired


  1. Toss together cornflakes, parmesan and cayenne in a a pie plate or shallow dish
  2. Whisk together egg and milk in a second pie plate
  3. Spread flour out on a third plate
  4. Season each fish fillet with salt and pepper
  5. Dredge in flour, shaking excess from fillets
  6. Dip in egg, and then coat with cornflake mixture place on a baking sheet that has been lightly sprayed with non-stick cooking spray
  7. Bake at 450 F, 10 minutes per inch of thickness measured at thickest part, or until fish flakes when tested with a fork
  8. Serve fish and fries with tartar sauce or cocktail sauce
