Pineapple Squares Recipe

Ingredients

Makes 9 squares

  • 2 cups canned crushed pineapple, drained
  • 1/2 cup plus 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1/3 cup vegan margarine
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup plain or vanilla soy milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup flaked sweetened coconut

Method

  1. Preheat the oven to 350°F
  2. Grease an 8-inch square baking pan
  3. In a large saucepan, combine the pineapple, 2 tablespoons of the sugar, cornstarch and lemon juice
  4. Cook over medium heat, stirring until slightly thickened, about 2 minutes
  5. Set aside
  6. In a large bowl, cream together the margarine and the remaining 1/2 cup of sugar until light and fluffy
  7. Add the flour, baking powder and salt
  8. Stir in the soy milk and vanilla and mix until crumbly
  9. Press about two-thirds of the dough mixture into the prepared baking pan
  10. Mix the coconut into the remaining dough mixture and set aside
  11. Spread the pineapple mixture evenly over the bottom crust in the baking dish
  12. Sprinkle the remaining dough mixture evenly on top of the filling and press gently
  13. Bake until the top is golden brown, about 30 minutes
  14. Cool 30 minutes before cutting
  15. Store in an airtight container
