Pumpkin Bread With Cranberries Recipe

Ingredients

Makes 1 loaf

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup canned solid-pack pumpkin
  • 1 cup light brown sugar
  • 1/3 cup canola oil
  • 1/3 cup plus 2 tablespoons soy milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon powdered ginger
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup sweetened dried cranberries

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a large bowl, combine the flour, baking powder, baking soda and salt
  4. Set aside
  5. In a separate bowl, combine the pumpkin, sugar, oil, soy milk, vanilla, cinnamon, allspice, ginger and nutmeg
  6. Mix the wet ingredients into the dry ingredients
  7. Fold in the cranberries and mix until just combined
  8. Transfer the batter to the prepared pan
  9. Bake until a toothpick inserted in the center comes out clean, about 1 hour
  10. Cool on a wire rack before slicing
