Moroccan-Spiced Sweet Potato Biscuits Recipe

Ingredients

Makes about 18 biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground cayenne
  • 1 cup mashed sweet potatoes
  • 1/2 cup plus 1 tablespoon plain soy milk
  • 1/4 cup canola oil

Method

  1. Preheat the oven to 425°F
  2. Lightly oil a baking sheet and set aside
  3. In a large bowl, combine the flour, baking powder, sugar, salt, allspice, coriander, cumin and cayenne
  4. In a medium bowl, combine the sweet potatoes, soy milk and oil and blend well
  5. Add the sweet potato mixture to the flour mixture and mix lightly with a fork until just combined and the mixture forms a soft dough
  6. Turn the dough out onto a lightly floured surface
  7. Roll the dough out until it is about 1/2 inch thick and cut into rounds with a floured 2-inch biscuit cutter or the rim of a small drinking glass
  8. Arrange the biscuits on the prepared baking sheet
  9. Reshape any leftover dough, cut into biscuits and place on the baking sheet
  10. Bake until the biscuits are golden brown on top, 16 to 18 minutes
  11. Serve hot
