Beef Stew With Dumplings Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) beef round roast, cubed
  • 2 tbsps (15 g) low-salt onion soup mix
  • 6 cups (1 4 L) low-salt beef broth
  • 1 cup (130 g) sliced carrot
  • 2-3 potatoes, diced
  • 1 cup (120 g) Heart-Healthy Baking Mix
  • 1 tablespoon (1 3 g) parsley
  • 6 tbsps (90 ml) skim milk

Method

  1. Place meat in cooker
  2. Sprinkle with soup mix and then add broth and vegetables
  3. Cover and cook on low for 6 to 8 hours
  4. Combine baking mix, parsley, and milk
  5. Drop by teaspoonfuls onto stew
  6. Cover and cook on high until dumplings are done, 30 minutes to 1 hour
  7. Yield: 6 servings
  8. Per serving: 425 g water; 287 calories (11% from fat, 35% from protein, 54% from carb)
