Southwestern Stew Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1 pound (900 g) beef round steak, cubed
  • 1 cup (160 g) diced onion
  • ½ teaspoon minced garlic
  • 1½ cups (355 ml) water
  • 1 tbsp (1.3 g) parsley
  • 1 tsp cumin
  • ½ cup (65 g) sliced carrots
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
  • 1 pound (455 g) frozen green beans
  • 1 pound (455 g) frozen corn
  • 115g diced green chilies
  • 240 g diced zucchini

Method

  1. Heat oil in a large skillet over medium-high heat
  2. Brown meat, onion, and garlic until meat is no longer pink
  3. Place in slow cooker
  4. Stir in remaining ingredients
  5. Cover and cook on high 30 minutes
  6. Reduce heat to low and cook 4 to 6 hours
  7. Yield: 6 servings
  8. Per serving: 605 g water; 350 calories (25% from fat, 44% from protein, 31% from carb)
