Mexican Steak Stew Slow Cooker Recipe
Ingredients
- 2½ pounds (1.1 kg) beef round steak
- 1 cup (160 g) chopped onion
- 1 tablespoon (15 g) salt-free mexican seasoning
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
- 1 cup (150 g) red bell pepper, cut into 1-inch (2 5 cm) pieces
Method
- Trim excess fat from beef and cut into 2-inch (5 cm) pieces
- Combine with onion in slow cooker
- Mix together seasoning and undrained tomatoes
- Pour over beef
- Place red pepper on top
- Cover
- Cook on low 6 to 8 hours or until beef is tender
- Yield: 8 servings
- Per serving: 183 g water; 201 calories (22% from fat, 68% from protein, 10% from carb)
