Refried Beans Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) dried pinto beans
  • 950 ml water
  • 1 cup (235 ml) coffee
  • 1 tsp minced garlic
  • 1 cup (160 g) diced onion
  • 1 tbsp (7 g) cumin
  • 2 tsps chili powder
  • 1½ teaspoons oregano

Method

  1. Rinse beans and place in a large bowl covered with water overnight
  2. Drain and place in slow cooker along with remaining ingredients
  3. Stir well, cover, and cook 8 to 10 hours or until beans are tender
  4. Use a potato masher or large spoon to mash the beans until desired consistency
  5. Yield: 12 servings
  6. Per serving: 115 g water; 141 calories (4% from fat, 24% from protein, 72% from carb)
