North African Chicken Slow Cooker Recipe

Ingredients

  • 1½ cups (355 ml) low-salt chicken broth
  • ½ cup 50 g thinly sliced celery
  • 1 cup (160 g) thinly sliced onions
  • ½ cup (75 g) sliced red bell pepper
  • ½ cup (75 g) sliced green bell pepper
  • ½ cup (130 g) chunky peanut butter
  • chicken thighs, skinned
  • ¼ teaspoon red pepper flakes

Method

  1. Combine broth, celery, onions, and peppers in slow cooker
  2. Spread peanut butter over both sides of chicken pieces
  3. Sprinkle with red pepper flakes
  4. Place on top of vegetables in slow cooker
  5. Cover and cook on low 5 to 6 hours
  6. Yield: 4 servings
  7. Per serving: 233 g water; 331 calories (53% from fat, 31% from protein, 16% from carb)
