Thai Chicken Slow Cooker Recipe

Ingredients

  • chicken thighs, skin removed
  • ¾ cup (195 g) low-salt salsa
  • ½ cup (130 g) chunky peanut butter
  • 1 tbsp (15 ml) low-salt soy sauce
  • 2 tablespoons (28 ml) lime juice
  • 1 tsp grated fresh ginger
  • 1 tbsp (1 g) chopped cilantro

Method

  1. Put chicken in slow cooker
  2. In a bowl, mix together remaining ingredients except cilantro
  3. Cover and cook on low 8 to 9 hours or until chicken is cooked through but not dry
  4. Skim off any fat
  5. Remove chicken to a platter and serve topped with sauce
  6. Sprinkle with cilantro
  7. Yield: 6 servings
  8. Per serving: 67 g water; 195 calories (57% from fat, 28% from protein, 15% from carb)
