Vegan Black Bean Burgers Recipe

Ingredients

Makes 4 burgers

  • 3 tablespoons olive oil
  • 1/2 cup minced onion
  • 1 garlic clove, minced
  • 1 1/2 cups cooked or 1 can black beans, drained and rinsed
  • 1 tablespoon minced fresh parsley
  • 1/2 cup dry unseasoned bread crumbs
  • 1/4 cup wheat gluten flour (vital wheat gluten)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • salt and freshly ground black pepper
  • 4 burger rolls
  • 4 lettuce leaves
  • 1 ripe tomato, cut into 1/4-inch slices

Method

  1. In a small skillet, heat 1 tablespoon of the oil over medium heat
  2. Add the onion and garlic and cook until softened, about 5 minutes
  3. Transfer the onion mixture to a food processor
  4. Add the beans, parsley, bread crumbs, flour, paprika, thyme and salt and pepper to taste
  5. Process until well combined, leaving some texture
  6. Shape the mixture into 4 equal patties and refrigerate for 20 minutes
  7. In a large skillet, heat the remaining 2 tablespoons oil over medium heat
  8. Add the burgers and cook until browned on both sides, turning once, about 5 minutes per side
  9. Serve the burgers on the rolls with lettuce and tomato slices
