Ginger-Molasses Bread With Berries Recipe

Ingredients

Makes 1 loaf

  • 1 cup warm soy milk
  • 1 tablespoon cider vinegar
  • 2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/3 cup sugar
  • 1 tablespoon ground ginger
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark molasses
  • 1/2 cup fresh, frozen, or sweetened dried blueberries

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a small bowl, combine the warm soy milk and vinegar and set aside
  4. In a large bowl, combine the flour, cornmeal, sugar, ginger, baking soda, baking powder and salt
  5. Mix well
  6. Add the molasses and the soy milk mixture to the flour mixture and stir until the batter is just mixed
  7. Fold in the blueberries and transfer the batter to the prepared pan
  8. Bake until firm and a toothpick inserted in the middle comes out clean, about 1 hour
  9. Let cool slightly before removing from the pan, then continue to cool on a wire rack for 20 minutes before slicing
