Carrots Parsnips With Diced Apple Recipe

Ingredients

Makes 4 servings

  • 1 pound carrots, cut diagonally into 1/4-inch slices
  • 1 pound parsnips, cut diagonally into 1/2-inch slices
  • 1 tablespoon olive oil
  • 1 Granny Smith apple, peeled, cored and cut into 1/2-inch dice
  • 1 teaspoon pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon ground nutmeg
  • salt and freshly ground black pepper

Method

  1. Steam the carrots and parsnips until just tender, about 5 minutes
  2. Set aside
  3. In a large skillet, heat the oil over medium heat
  4. Add the apple, maple syrup, lemon juice and nutmeg
  5. Cover and cook until the apple is softened, about 4 minutes
  6. Add the steamed carrots and parsnips and season with salt and pepper to taste
  7. Stir gently to mix well and heat through
  8. Serve immediately
