Crunchy Sesame Coleslaw Recipe

Ingredients

Makes 4 servings

  • 1/4 cup tahini (sesame paste)
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon sugar
  • salt and freshly ground black pepper
  • 3 cups shredded green cabbage
  • 1 medium carrot, shredded
  • 12 snow peas, trimmed and cut diagonally into thin matchsticks
  • 2 green onions, minced
  • 2 tablespoons toasted sesame seeds, for garnish
  • 1 cup crispy chow mein noodles (optional)

Method

  1. In a small bowl, combine the tahini, vinegar, soy sauce, sesame oil, sugar and salt and pepper to taste
  2. Stir well to blend and set aside
  3. In a large bowl, combine the cabbage, carrot, snow peas and green onions
  4. Pour the dressing over the vegetables and toss gently to coat
  5. Taste, adjusting seasonings if necessary
  6. Sprinkle with toasted sesame seeds and chow mein noodles, if using
  7. Refrigerate, covered, until ready to serve
