  • 11/3 cups unsweetened almond milk
  • 1/4 cup almond butter with oil or peanut butter or cashew butter
  • 1 tablespoon sugar-free maple syrup or agave nectar or honey
  • 1 tablespoon ground flaxseed
  • 2 teaspoons baking powder
  • pinch of sea salt.
  • 11/3 cups whole wheat flour or oat flour
  • cooking spray.
  • 1 cup blueberries

Method

  1. Preheat the oven to 350°F
  2. Spray the mini muffin cups with cooking spray
  3. Add the batter ingredients to the blender in this order: almond milk, almond butter, maple syrup, flaxseed, baking powder, salt, and whole wheat flour, and blend until smooth
  4. Evenly divide the batter among the prepared molds
  5. Top each muffin with a few blueberries, then bake in the oven for 25 to 30 minutes, or until the tops are golden brown and a toothpick comes out clean when a muffin is pierced
  6. Allow the bites to cool before removing them from the muffin pan
  7. Store them in an airtight container or resealable plastic bag for up to 5 days in the fridge or 1 month in the freezer
