Ingredients
- Serving Size : 1
- 1/4 cup butter
- 4 cups slliced zucchini – or other squash
- 1 medium onion – sliced
- 1 teaspoon salt
- 1 dash pepper
- 2 tomatoes – peeled and sliced
- 1/2 cup grated cheddar cheese
- soy sauce – optional
Method
- Melt butter in skillet
- Add squash, onion, salt, pepper and tomatoes
- Cook, covered, for 10 to 15 minutes or until squash is tender.
- Sprinkle with cheese and soy sauce.
- 4 to 6 servings.
