Austrian Noodles Cabbage Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cups shredded savoy cabbage Salt and freshly ground black pepper
  • 12 ounces linguine, broken into thirds
  • 2 tablespoons vegan margarine
  • 1 teaspoon sugar
  • 1 teaspoon caraway seeds

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, cover and cook until soft and golden brown, about 10 minutes
  3. Add the cabbage and salt and pepper to taste
  4. Cook, uncovered, stirring occasionally, until the cabbage begins to brown slightly, about 10 minutes
  5. Cover, reduce heat to low and continue cooking until cabbage is soft, about 10 minutes longer
  6. In a large pot of boiling salted water, cook the linguine, stirring occasionally, until al dente, about10 minutes
  7. Drain well and transfer to a large serving bowl
  8. Add the cabbage mixture, margarine, sugar and caraway seeds and toss gently to combine
  9. Serve immediately
