Ingredients
Makes 4 servings
- 2 Granny Smith apples, coarsely chopped
- 1/2 cup finely chopped red onion
- 1/2 jalapeno chile, seeded and minced
- 1 1/2 teaspoons grated fresh ginger
- 3 tablespoons fresh lime juice
- 2 teaspoons agave nectar
- salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 pound seitan cut into 1/2-inch slices
- 1/4 cup apple juice
Method
- In a medium bowl, combine the apples, onion, chile, ginger, lime juice, agave nectar and salt and pepper to taste
- Set aside
- Heat the oil in a skillet over medium heat
- Add the seitan and cook until browned on both sides, turning once, about 4 minutes per side
- Season with salt and pepper to taste
- Add the apple juice and cook for a minute until it reduces
- Serve immediately with the apple relish
