Citrus Cheesecake Recipe

Ingredients

For Crust:

  • 1 egg yolk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/3 cup white sugar
  • 1/2 cup butter, room temperature
  • 1 egg white
  • 3 (8 ounce) packages cream cheese
  • 1 2/3 cups white sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon grated orange zest
  • 2 teaspoons grated lime zest
  • 1 1/2 teaspoons grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 1 cup sour cream
  • 2/3 cup orange marmalade
  • 2 teaspoons fresh lemon juice

Method

  1. Preheat oven to 450F
  2. In a small bowl, whisk together egg yolk, lemon juice, lemon peel and vanilla
  3. Add flour, sugar and butter to a food processor and pulse until a coarse dough is formed
  4. Add in yolk mixture until blended
  5. Press into the bottom and 1 ½ inches up the sides of a greased, 9 inch springform pan
  6. Freeze crust for 10 minutes
  7. Brush crust lightly with egg white and bake 15 minutes, until just lightly golden
  8. Cool and reduce heat to 350F
  9. In a large mixing bowl, beat cream cheese and sugar until smooth
  10. Mix in cornstarch, lemon juice, orange zest, lime zest, lemon zest and vanilla
  11. Beat in eggs one at a time, then sour cream
  12. Pour filling into crust
  13. Bake 55 to 60 minutes, until center is almost set
  14. Cool, cover and refrigerate overnight
  15. In a medium saucepan, bring marmalade and lemon juice to a boil until slightly reduced, about 2 minutes
  16. Spread over top of cake
  17. Chill 1 hour
  18. Garnish suggestion – fresh orange slices
