Ladyfinger Cheesecake Recipe

Ingredients

• 3 (3 ounce) packages ladyfingers
• 2 (8 ounce) packages cream cheese plus 1 (3 ounce) package, softened
• 1 teaspoon vanilla extract
• 1 cup white sugar
• 1 pint heavy whipping cream
• 1 (21 ounce) can cherry or blueberry pie filling

Method

1. Place ladyfingers around the edge and on the bottom of a 9 inch springform pan
2. In a large mixing bowl, beat cream cheese, sugar and vanilla until smooth
3. In a medium bowl, whisk whipping cream until peaks form
4. Fold into cream cheese mixture
5. Spoon half of batter into the pan on top of the ladyfingers
6. Cover with a layer of ladyfingers, then add remaining batter and one more layer of ladyfingers
7. Top with pie filling
8. Chill overnight
9. Serve with whipped topping
