Frangelico Chocolate Cake With Frosting Recipe

Ingredients

  • Serving Size : 12

cake:

  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1 cup brown sugar – packed
  • 2 1/4 cups flour
  • 1/2 cup unsweet cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 cup frangelico
  • 3/4 cup strong cold coffee

frosting:

  • 6 tablespoons butter
  • 1 pound sifted powdered sugar
  • 3 tablespoons unsweet cocoa powder
  • 3 tablespoons frangelico
  • 2 tablespoons up to 3 T hot coffee

Method

  1. Grease and flour two 9″ cake pans.
  2. Preheat oven to 350:F
  3. Separate eggs.
  4. Beat egg whites until frothy; then beat in sugar until stiff peaks form.
  5. Set aside.
  6. Cream butter and brown sugar until fluffy.
  7. Beat in yolks one at a time.
  8. Sift flour, cocoa, baking soda tog.
  9. Add to creamed mixture alternately with coffee and Frangelico; blend well.
  10. Fold egg whites into batter.
  11. Pour into prepared pans.
  12. Bake 30-35 minutes or until done.
  13. Cool 10 minutes.
  14. Invert on wire racks and remove pans.
  15. Cool before frosting.
  16. FROSTING: Cream butter with sugar.
  17. Add everything else and beat until smooth
