American Gratin Souffle Recipe

Ingredients

  • 1 large eggplant, pared and cubed
  • 2 beaten eggs
  • 1/2 C. milk
  • 1/2 C. dry breadcrumbs
  • 1 C. shredded American cheese
  • 1/4 C. melted butter
  • 3/4 C. crushed crackers

Method

  1. Set your oven to 350 degrees F before doing anything else and grease a casserole dish
  2. In a pan of salted boiling water, cook the eggplant cubes for about 15 minutes
  3. Drain the eggplant cubes well and transfer into a a bowl
  4. With a fork, mash the eggplant cubes well
  5. Add the 3/4 C of the cheese, milk, eggs, breadcrumbs, salt and pepper and mix until well combined
  6. In another small bowl, add the crackers and melted butter and mix well
  7. Place the eggplant mixture into the prepared casserole dish evenly and top with the cracker mixture, followed by the remaining 1/4 C of the cheese
  8. Cook in the oven for about 30 minutes
