Sweet Carrot Souffle Recipe

Ingredients

  • 1 1/2 lb. carrots, sliced
  • 1/2 C. butter
  • 3 eggs
  • 1 tsp vanilla
  • 1/4 C. all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 C. sugar
  • 3/4 tsp ground cinnamon

Method

  1. Set your oven to 350 degrees F before doing anything else and lightly, grease 1 1/2-quart souffle dish
  2. In a pan of water, add carrots and bring to a boil
  3. Cook for about 20-25 minutes
  4. Drain well
  5. In a food processor, add the coked carrots and remaining ingredients and pulse until smooth
  6. Transfer the mixture into the prepared souffle dish evenly
  7. Cook in the oven for about 1 hour and 10 minutes
