Ribs Braised With Soy And Ginger Recipe

Ingredients

  • 4 pounds pork baby back ribs (about 2 sides) or your favorite ribs

SOY – GINGER BRAISING SAUCE

  • 1 orange
  • 2 cups dry red wine
  • 1/2 cup heavy soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 cinnamon stick
  • 10 juniper berries — crushed
  • 6 whole cloves
  • 3 dried red chiles (optional)
  • 1/4 cup thinly sliced fresh ginger
  • 10 cloves garlic — peeled and crushed

Method

  1. Ask the butcher to cut the ribs across the bone into 2-inch-wide strips.
  2. Remove the membrane from the underside of the ribs.
  3. Then cut the strips into 6-inch lengths.
  4. To make the braising sauce, in a 4-quart saucepan, remove all the orange skin with a potato peeler Combine the orange skin with all the remaining ingredients for the sauce.
  5. Bring to a boil, cover decrease the heat to a simmer and allow the sauce to simmer for 30 minutes.
  6. To braise the ribs, add the ribs to the pot.
  7. Cover the pot and simmer until the meat is tender about 1 hour.
  8. Serve at once accompanied by a little of the braising liquid.
  9. If you are not serving the ribs immediately you can turn off the heat and leave the saucepan at room temperature for up to 4 hours.
  10. You can also refrigerate the ribs submerged in the sauce for up to a day in advance of serving.
  11. To reheat the ribs, bring the sauce to a simmer arid allow the ribs to simmer for 5 minutes.
