Marinara Mussels With Mushrooms Italian Recipe

Ingredients

  • 2 pound mussels
  • 1/2 cup red wine
  • 2 pound tomato tinned or chopped
  • mushrooms

Method

  1. Clean 2lbs mussels in water & lots of black pepper for an hour & then drain
  2. Clean beards off mussels
  3. In a large pan, saute garlic in 2 tbls of olive oil, slow heat
  4. Everything should be fresh,esp mushrooms & add ingredientes to taste
  5. Saute for 15 minutes and then add tomatoes
  6. Break the tomatoes with your hands & blend
  7. Cover and simmer for 1 hour, stirring frequently
  8. Add 2 fresh, diced tomatoesand cook for another 10-15 min longer
  9. Add 1/4-1/2cup of dry red wine &cook for another 10 minutes
  10. Don’t over- heat, don’t dry up the sauce
  11. Adjust seasonings to taste as you go
  12. Use freshly grated parmasan AND romano cheese for the top- ping &add all on top of cooked pasta
  13. Add fresh pepper- black &/or red
  14. Serve with a DARK green salad and serve with a slightly chilled Chianti red wine
  15. Add candle light and with Classical guitar in the background makes quite an evening
