Roasted Peppers Italian Recipe

Ingredients

  • 4 md yellow and red bell peppers
  • 2 tablespoon extra-virgin olive oil
  • 4 garlic cloves, sliced
  • 1/4 cup plus 1-1/2 teaspoons
  • balsamic vinegar
  • 2 sprigs fresh thyme or
  • 1/4 teaspoon dried
  • 1/4 cup coarsely chopped flat-leaf
  • parsley or fresh basil
  • freshly ground black pepper
  • parsley or fresh basil

Method

  1. Roast the bell peppers directly over a gas flame or under the broiler as close to the heat as possible, turning, until charred all over, about 5 minutes
  2. Enclose the peppers in a paper bag and set aside for 10 minutes to steam
  3. With a small knife, scrape off the blackened skin; remove the cores, seeds and ribs
  4. Rinse under running water
  5. Slice the peppers lengthwise into 1-inch strips
  6. The recipe can be prepared to this point up to 3 days ahead; cover and refrigerate
  7. Make dressing
