Rhubarb-Strawberry Streusel Squares Recipe

Ingredients

  • Serving Size : 9
  • 3 teaspoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 teaspoons butter or margarine
  • 1 egg
  • 2 teaspoons milk
  • 1 teaspoon vanilla – filling-
  • 1 1/4 liters rhubarb – 1/2″ slices (4 + c)
  • 3 strawberry gelatin
  • 1/2 cup sugar – topping-
  • 2/3 cup flour
  • 1/3 cup brown sugar – packed
  • 1/4 cup butter or margarine

Method

  1. Crust: Combine the dry ingredients and cut in the butter, until crumbly.
  2. Add egg, beaten lightly with milk and vanilla and stir to moisten.
  3. Pat the dough into the bottom and up 1 inch on sides of a 9″ square pan.
  4. Filling: Cut the rhubarb into 1/2 inch slices-approximately 4-4 1/2 cups.
  5. Combine with small pkg of dry gelatin and sugar.
  6. Stir and set aside Topping: Combine the flour and brown sugar.
  7. Add butter and mix well.
  8. Pour rhubarb into crust.
  9. Squeeze handfuls of topping into firm hunks and then break into large nuggets over rhubarb.
  10. Bake at 350: for 1 hour and 15 minutes or until bubbly.
  11. Cool on rack; cut into squares and top with vanilla ice cream.
