Low Fat Broccoli-Lasagne Roll-Ups Recipe

Ingredients

  • 4 uncooked lasagne noodles
  • 1 jar spaghetti sauce (16 ounces)
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella
  • cheese (4 ounces)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon pepper
  • 1/8 teaspoon red pepper sauce
  • 1 package frozen chopped (10 ounces)
  • broccoli, thawed and drained

Method

  1. Heat oven to 350 degrees.
  2. Cook noodles as directed on package; drain.
  3. Cover noodles with cold water.
  4. Pour 1 cup of the spaghetti sauce into ungreased square baking dish, 8 X 8 X 2 inches.
  5. Mix remaining ingredients.
  6. Drain noodles.
  7. Spread about 3/4 cup of the cheese mixture to edges of each noodle.
  8. Roll up noodles.
  9. Place seam sides down on spaghetti sauce.
  10. Pour remaining spaghetti sauce over roll-ups.
  11. Cover and bake about 35 minutes or until sauce is hot and bubbly.

SERVINGS.

MICROWAVE DIRECTIONS: Prepare as directed above-except use square microwavable dish, 8 X 8 X 2 inches.

  1. Cover tightly and microwave on high 10 to 12 minutes, rotating dish 1/2 turn every 4 minutes, until hot and bubbly.
