Ingredients
- 2 – 3 lbs boneless skinless chicken thighs
- 2 onions, halved lengthwise and thinly sliced
- 1.5 tbsp olive oil
- 0.5 oz. (weight) ground sumac*
- 1 tsp cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp ground cloves
- big pinch saffron.
- handful of pine nuts.
- fresh mint for garnish (optional).
- salt and pepper
Method
- Combine olive oil, onions, cinnamon, sumac, allspice, saffron, and cloves in a large microwave bowl
- Microwave this for 2 minutes
- Place the chicken in the crock pot then season this with salt and pepper
- Remove mixture from microwave then stir this on the chicken letting the chicken nestle in the onions
- Cook this on for 6 hours or until the chicken is cooked
- Saute the pine nuts until brown in olive oil over medium-high heat
- Chop the mint finely
- Top chicken with pine nuts and mint before serving
